A week past summer and tomatoes are either coming into their final stage of ripening or they are stubbornly refusing to turn as red and yellow as the leaves on trees. If you find yourself at this frustrating tomato crossroad, I have two recipes for you.
The first recipe is for your plate, using green tomatoes and caramelized onions. Definitely not a recipe for dogs. The secret to this savory pie is a black pepper crust that adds an interesting bite.Feel free to substitute whatever cheeses or herbs you have on hand to make your own version. I used cheddar and cotija leftover from our mexican meal a few nights before. You might also want to use mozzarella.

The second recipe is for the dog's cookie jar. Using oatmeal, red tomatoes, fresh basil and a bit of that leftover cheese from the tomato pie you can make a delicious cookie full of Italian flavor. If your dog could talk he'd say "Mama Mia!"
Tomato plants and green tomatoes are toxic to dogs so you should pick the deep colored tomatoes that are fully ripe. Don't use any tomatoes with black spot, but if you have a couple that have split open during the harvesting process, go ahead and throw those in. This cookie is quick to prepare and will fill the house with a scent that will get your mouth watering for that tomato pie.
